Quick and easy to make, these Pecan Snowball Cookies are a great winter treat. A staple in many holiday cookie exchanges, these classic holiday cookies use only a few simple ingredients and are a fun recipe to make with the kids. One recipe makes about 3 dozen cookies, so you’ll have plenty for sharing with friends and family!
Preheat oven to 325°F. Prepare cookie pans with parchment paper.
In the bowl of a food processor, pulse pecans for 20-30 seconds or until coarsely ground. Do not over-process, or the nuts will become nut butter.
In a medium bowl, combine ground pecans, flour and salt; stir to combine.
In a large bowl, combine butter and sugar and beat on medium speed with electric mixer for 2-3 minutes or until light and fluffy. Add vanilla extract and continue to beat until combined. Add pecan mixture and beat on low speed until dough forms. Roll dough into 1 in. balls (about 1 tablespoon), and place 2 in. apart on prepared pans.
Bake 20-25 minutes or until bottoms of cookies are golden brown. Remove pans to cooling grid and cool 5 minutes. Roll warm cookies in confectioners’ sugar; let cool completely.
