1 1/2 cups chocolate cookie crumbs
3 tablespoons granulated sugar
5 tablespoons butter, melted
1 package cream cheese, softened
2/3 cup raspberry preserves
2 cups Frozen whipped topping
fresh raspberries

- For crust, combine cookie crumbs and sugar in medium bowl. Stir in melted butter until well-combined. Divide evenly and press into mini pie pans.

For filling, beat cream cheese on medium speed with electric mixer until smooth and creamy. Add raspberry preserves and beat until smooth. Fold in whipped topping. Spoon mixture into prepared pans, smoothing tops with a spatula. Top with fresh raspberries and additional whipped topping, if using. Chill until ready to serve.
Makes 4 mini pies.
