How to Pipe a Water Lily

Beautiful water lilies make a statement when you add them to your cake decorations. Learn how to pipe these beautiful petals in delicious buttercream or royal icing to make your next creation a stunning floral masterpiece.

  1. Base. Using tip 12 and stiff consistency icing tinted yellow, use a dot of icing to attach a Pre-cut Flower Square to the center of the flower nail.

    Pipe a mound about 1.9 cm (3/4 in.) in diameter and about 1.27 cm (1/2 in.) high in the center of the nail.

  2. Stamens. Switch to tip 233, pipe pull-out stamens covering the top of the mound base.
  3. First Row of Petals. Use a bag fitted with tip 366 filled with stiff consistency icing tinted the petal color. Hold the decorating bag at a slight angle (45°), with the back of the bag pointing towards your right shoulder (left shoulder for left-handed decorators).

    Pipe four leaf shaped petals. Evenly space the petals around the flower center. Draw the petal to a point and lift the tip up slightly to tilt the petals upward.

    Using lighter pressure, pipe two more petals between the first petals. If you squeeze too hard the petals will be hard to fit in.

  4. Second Row of Petals. Pipe a second row of petals that begin to tilt upward. Stagger the petals between those in the first row.

    Use a little cornstarch on your fingers to sharpen the point and lift the petal a little more if needed.

  5. Third Row of Petals. Change to tip 352.

    Holding the bag straight up (90°), pipe a third row of smaller petals up against the flower center tilting inwards a little.
