Gerbera Garden Cupcakes

Your cupcakes will blossom with beauty when you top them with a sunny gum paste Gerbera daisy! These flowers are easy to make with the cutters and instructions in our gum paste cutter set. They are a variation of the classic gum paste daisy you will learn in The Wilton Method of Cake Decorating Course 3.

  1. Make Gerbera daisies 2 days in advance. Tint portions of gum paste: 1/4 oz. light yellow, 2 oz. each green, violet, rose and dark yellow. Use fondant roller with pink guide rings to roll out all gum paste except light yellow 1/16 in. thick.

    Use large and small daisy cutters and instructions from flower cutter set to make three or four Gerbera daisies in each color with light yellow centers and without Color Dust edible accents.

    Use scissors to cut squares of heavy-duty foil, 4 in. x 4 in. Use 3 in. flower forming cup to mold additional cups from foil squares. Let daisies dry 48 hours in cornstarch-dusted cups.

  2. Decorate flower centers. Use brush and piping gel to attach green Sugar Pearls to daisy centers. Let dry 1 to 2 hours.
  3. Make cupcakes. Prepare batter following recipe directions. Bake and cool cupcakes.
  4. Decorate cupcakes. Prepare buttercream icing following recipe directions. Use spatula and icing to ice cupcakes smooth. Position a daisy on each cupcake.
