This rocky road brownie recipe is packed with mini marshmallows, chocolate chips and almonds for a delicious treat. Turn your favorite rocky road ice cream into a shareable fudgy brownie perfect for potlucks and bake sales.
Preheat the oven to 350°F. Spray 13 in. x 9 in. pan with vegetable pan spray.
In a small bowl, combine flour, baking soda and salt and set aside.
In a small saucepan, melt butter and sugar with water and stir until sugar is dissolved.
Add 2 cups chocolate chips and stir until melted then remove from heat.
Stir in vanilla and cool slightly.
In a large bowl, beat eggs with an electric mixer.
Add melted chocolate and mix well.
Add flour mixture and stir until just combined. Spread batter in prepared pan.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out almost clean.
While brownies are hot, sprinkle evenly with marshmallows, almonds and remaining cup of chocolate chips. Return to the oven for 5 minutes or until marshmallows begin to melt. Cool completely on the cooling grid before cutting.
