Apple sauce and chopped Fiji apples pack the punch of apple flavor in this moist loaf cake. A layer of sweet-spicy streusel flavored with cinnamon, nutmeg and brown sugar in the middle and more streusel on top melts-in-your mouth and adds crunch. Bake in a loaf pan for easy-to-cut and-serve portions.

Ingredients

    • Streusel

    • 1/2 cup firmly-packed light brown sugar

    • 1/3 cup all-purpose flour

    • 2 teaspoons ground cinnamon

    • 1/2 teaspoon ground nutmeg

    • 2 tablespoons butter, softened

    • Bread

    • 1-1/4 cups all-purpose flour

    • 1/2 teaspoon baking powder

    • 1/2 teaspoon baking soda

    • 1/4 teaspoon salt

    • 1/2 cup (1 stick) butter, softened

    • 1/2 firmly packed light brown sugar

    • 1 egg

    • 1 teaspoon vanilla extract

    • 1/3 cup applesauce

    • 1 cup peeled and chopped Fuji apples (about 1/2 large)

    1. Preheat oven to 325°F. Spray loaf pan with vegetable pan spray.
    2. For streusel, stir together brown sugar, flour, cinnamon, nutmeg, and butter in small bowl.
    3. In small bowl, combine flour, baking powder, baking soda and salt. In large bowl, beat butter and brown sugar with electric mixer until light and fluffy. Add egg and vanilla. Beat well. Add flour mixture in two additions alternately with applesauce, mixing until incorporated. Fold in apples.
    4. Spread half of the batter in bottom of prepared pan. Sprinkle with half of the streusel mixture. Top with remaining batter, smoothing the top evenly. Sprinkle remaining streusel over top of loaf.
    5. Bake 60-65 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove to cooling rack to cool completely.
