Elegant Floral Birthday Cake

  1. Bake cake. Prepare cake batter following recipe instructions. Bake and cool two cake layers. Level both layers to 2½ in. high. Fill and stack for 5 in. high cake.
  2. Ice cake. Ice cake smooth. Using tip of spatula, mark horizontal lines around sides of cake and swirl on top.
  3. Tint fondant. Tint ¼ oz. fondant each light, medium and dark coral using color combinations provided. Using Ivory icing color, tint ½ oz. fondant ivory. Using Orange icing color, tint ¼ oz. fondant light orange. Tint remaining ¼ oz. fondant green using color combinations provided. Combine Moss Green and Lemon Yellow icing colors to get green color shown. Combine Creamy Peach and Ivory icing colors to get light, medium and dark coral colors shown. Reserve remaining fondant white.
  4. Make fondant flowers. Using fondant roller with pink guide rings, roll out light orange and light, medium and dark coral fondant separately. Using all three blossom cutters, cut out 2 to 3 flowers in each size, for total of 21 to 27 flowers. Using ball tool and shaping foam, lightly cup flowers. Using ivory fondant, make 1/8 in. ball for center of each flower. Set flowers aside on cornstarch-dusted board.

    Using fondant roller with pink guide rings, roll out green fondant. Using leaf cut-out, cut 12 to 14 leaves. Set aside on cornstarch-dusted board.

  5. Make fondant name plate. Using fondant roller with pink guide rings, roll out ivory fondant. Using circle cutter, cut out circle.

    Tint ¼ cup icing dark coral using color combinations provided.

    Prepare decorating bag with tip 3 and dark coral icing. Pipe name on ivory fondant circle.

  6. Decorate cake. Attach fondant circle to front center of cake (if icing has crusted, use additional buttercream to attach). Place flowers and leaves on each side of fondant circle.
