Ingredients

  • 1/2 package (14.1 ounces) refrigerated pie crusts or 1/2 recipe Flaky Pie Crust

  • 2 eggs

  • 1 can (15 ounces) solid pack pumpkin (not pumpkin pie filling)

  • 3/4 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground cloves

  • 1 can (12 ounces) evaporated milk

  • Supplies

  • Cooling Rack

  • Knife

  • 9 inch Pie Pan

  1. Preheat oven to 425F.
  2. Roll out 1 pie crust into round; press onto bottom and up sides of pie pan; trim edges and prick bottom with a fork. Bake for 7-8 minutes.
  3. In a large bowl, whisk eggs until lightly beaten.
  4. Stir in pumpkin, sugar, cinnamon, salt, ginger, cloves and evaporated milk.
  5. Pour pumpkin mixture into pie shell. Place pie on cookie pan; bake 15 minutes.
  6. Reduce oven temperature to 350F. Continue baking 40-45 minutes or until a knife inserted in the center comes out clean. Cool completely on a cooling grid.
