- Preheat the oven to 350°F. Prepare a 9 inch pan with vegetable pan spray.
- Make topping. In a small bowl stir together the melted butter, brown sugar and ginger.
- Spread mixture in an even layer in the pan. Arrange pear slices over butter mixture and set aside.
- Make cake. Combine flour, baking powder and salt in a medium bowl.
- In a large bowl, beat sugar and butter with an electric mixer at medium speed until well combined.
- Add eggs and vanilla, beating until well-combined. Alternately add flour mixture and milk; mixing until just combined. Pour the cake batter over pear slices in the pan.
- Bake 37-39 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes on a wire rack and then turn out onto a serving plate.
- Serve slightly warm with ice cream, if desired.
