Easy Blackberry Cobbler

  1. Preheat oven to 375°F. Prepare a 9 in. x 9 in. pan with vegetable cooking spray.
  2. Prepare blackberry filling: In a large bowl, stir together granulated sugar, cornstarch, and cinnamon. Add the blackberries and lemon zest; gently toss until coated.
  3. Pour blackberry mixture into the prepared pan.
  4. Prepare topping. Stir together flour, brown sugar, baking powder and salt in a large bowl.
  5. Add butter into flour mixture. Using a pastry blender or 2 forks, cut butter into the flour mixture until it resembles coarse crumbles.
  6. Next, stir in milk and vanilla until a soft dough forms.
  7. Divide dough into 12 pieces and place each piece on top of blackberry mixture.
  8. Brush tops of dough pieces with milk and sprinkle with sparkling sugar.
  9. Bake cobbler for 42-47 minutes or until topping is golden brown and filling is bubbly and thickened. Serve warm.
