Easter Brownies

Welcome spring with a batch of these cute Easter brownies! With fun characters like bunnies, chicks and lambs, as well as seasonal icons like eggs and flowers, you can create a delicious dessert that kids and adults are sure to love!

  1. Make candy decorations. Melt Bright White and Light Cocoa Candy Melts candy according to the package instructions.Next, set the melted Light Cocoa candy aside and tint 1 1/2 oz each of melted Bright White candy the following colors, yellow, orange, pink and blue using the Primary Candy Color Set. Reserve the remaining 1 1/2 oz melted white candy.
  2. Place the melted light cocoa, yellow, orange, pink, blue and white candy in parchment bags and cut off very small tip from each bag.
  3. Fill cavities in the candy molds with the following melted candy colors:
    • Tri-Leaf - White for lambs
    • Round & Leaf - White for bunnies
    • Round, Micro Pave Circle, Small Faceted Teardrops - Yellow for chicks bodies
    • Small Diamond Shape - Orange for chicks beaks
    • Large Micro Pave Teardrop - Your choice of colors for eggs
    • Flower - Your choice of colors for flowers
  4. Once molds have been filled, place in the refrigerator, chill for 10 to 15 minutes until set and then unmold. Repeat this process until you have enough pieces to make the characters.
  5. Assemble bunnies and chicks using dots of melted candy. Chill until set, about 3 to 5 minutes. Using light cocoa candy, pipe faces on bunnies, chicks and lambs. To add fluff to the lamb heads, use white candy to pipe three dots in triangle shape. Let them set one minute, then pipe three dots in between the first layer of dots. Let it set one minute. Pipe one final dot on top.
  6. Use tri-leaf mold for lamb, flower mold for flowers, large micro pave teardrop mold for eggs, round and leaf molds for bunnies, and small diamond shape, round, micro pave circle and small faceted teardrop molds for chicks. Chill candy until set, about 10 to 15 minutes, unmold. Repeat until all pieces are complete.
  7. Bake brownies. Use your favorite brownie recipe or mix to make 4 cups of brownie batter. Bake and cool completely. Put them aside and leave them in the baking pan.
  8. Tint icing. Use Color Right food coloring to tint icing in the following shade:
    • Pastel Purple: 2 cups white icing + 1 blue + 2 pink
  9. Ice and decorate brownies. Use pastel purple buttercream to ice the brownies while they’re still in the pan. Sprinkle iced brownies with Spring Nonpareils Sprinkles.
  10. Next, cut out the brownies based on size of candy character piece to be placed on top of it:
    • Bunny: 1-3/4 inches x 1-1/2 inches
    • Flower: 1 inch x 1 inch
    • Egg: 1-1/2 inches x 1-1/4 inches
    • Lambs: 1-1/4 inches x 1 inch
    • Chick: 1-1/4 inches x 1-1/2 inches
  11. Then, place the candy characters on top of the cut brownies and enjoy!
