Hint: Complete steps 1-3 one day in advance.
Tint fondant. Tint 2 oz. white fondant light green using color combination provided. Combine Lemon Yellow and Moss Green icing colors to get light green color shown. Using 9 in. fondant roller with purple guide rings, roll out fondant. Emboss with fondant dot roller. Prepare fondant adhesive following recipe instructions.
- Cut fondant. Using oval cut-outs, cut two “F” ovals, one “E” oval, one “C” oval, one “B” oval and one “A” oval. Assemble cactus, trimming as necessary to fit pieces together. Adhere pieces together with fondant adhesive. Let dry 8 to 10 hours on cornstarch-dusted board. Once dried, use dusting brush to dust edges with Spruce Green Color Dust.
- Pipe crosses. Using Black icing color, tint ½ cup royal icing black. Prepare decorating bag with tip 8 and black icing. On wax paper-covered board, pipe 60 crosses, about 1 ¼ in. in size. Let dry 8 to 10 hours.
- Bake cakes. Prepare cake batter following recipe instructions. Bake and cool four cake layers according to package instructions.
- Prepare buttercream. Prepare buttercream to thin consistency following recipe instructions. Level, fill and stack layers. Prepare cake for fondant covering. Cover cake with white fondant.
- Make cake topper. Melt Candy Melts drizzle pouch according to package instructions. Using melted candy, attach lollipop stick to back of fondant cactus. Chill until set, about 5 to 10 minutes. Insert into top of cake.
- Decorate cake. Attach crosses in rows around cake, using touch of icing to adhere.
