Cranberry Brie Bites and Creamy Chocolate Tarts

  1. Preheat oven to 400°F. Prepare mega mini muffin pan with vegetable pan spray.
  2. Cut 24 2-1/4 inch circles out of puff pastry and 24 2-1/4 inch circles out of pie dough. Fit dough circles into prepared pan, pressing into bottom and up sides.
  3. Spoon 1 teaspoon cranberry sauce into puff pastry cups.
  4. Melt 2/3 cup dark cocoa Candy Melts Candy according to package directions. In medium bowl, beat cream cheese, egg yolk and salt with electric mixer on medium speed until well-combined. Add melted candy and beat until well-combined. Divide mixture evenly among pie crusts.
  5. Bake 13-15 minutes or until golden brown, rotating pan halfway through baking. Immediately top cranberry bites with pieces of brie and sprinkle with rosemary. Let cool in pan 5 minutes and remove to serving plate. Melt remaining candy, and drizzle chocolate tarts with candy and sprinkle with sparkling sugar.
