

Cinnamon-Pecan Streusel Coffee Cake

1-1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
6 ounces cream cheese, softened
3 tablespoons butter
1/2 cup granulated sugar
1 egg
1 egg yolk
5 tablespoons milk
2 teaspoons vanilla extract
Confectioners’ sugar, for garnish (optional)

- Preheat oven to 350°F. Prepare 9 in. round baking pan with vegetable pan spray.
- For the topping: In a medium bowl, combine oats, flour, light brown sugar, pecans, cinnamon, and salt.
- Using a pastry blender, cut in butter until well-blended.
- For the cake: In small bowl, combine flour, baking powder, salt and baking soda.
- In large bowl, beat cream cheese, butter and sugar with an electric mixer until creamy. Add egg, egg yolk, milk and vanilla; beat until smooth. Add flour mixture to cream cheese mixture; beat at low speed just until combined (batter will be thick).
- Spread mixture in prepared pan and sprinkle with topping.
- Bake for 35-40 minutes or until toothpick inserted in the center of the cake comes out clean.
- Sprinkle with confectioners' sugar, if using. Serve warm.
