Christmas Cake with Peppermint Decorations

Decorated with white, pink and light teal buttercream, then topped with sparkling sanding sugar and candy accents, this cake is great for any December celebration.

  1. Bake cake.Prepare cake batter following recipe instructions. Bake and cool two cake layers.
  2. Make candy peppermints. Place peppermint candy template on cake board, then cover with parchment paper, taping down to secure.

    In medium bowl, combine 2 oz. Turquoise, 2 oz. Bright White and 1 oz. Green Candy Melts candy to make light green; melt together, according to package instructions.

    Prepare parchment bag with melted light green candy; cut small hole in tip of bag. Following template, pipe wrappers of candies.

    In another medium bowl, add 4 oz. of Bright White candy then melt according to package directions. Transfer to parchment bag; cut small hole in tip of bag.

    Following template, pipe white swirls of candies. Let set completely, about 10 minutes.

    In third medium bowl, add 4 oz. of Red candy then melt according to package directions. Transfer to parchment bag; cut small hole in tip of bag.

    Following template, pipe red swirls of candies. Sprinkle red candy with red sanding sugar. Chill until set, about 5 minutes.

    Repeat process until you have piped a total of 50 peppermint candies.

  3. Assemble cake. Level, fill and stack cake layers for 6 in. tall cake. Lightly crumb coat; chill until set, about 20 minutes.
  4. Tint icing. Combine Rose and a touch of Sky Blue icing colors to get light pink color shown. Combine Sky Blue and Leaf Green icing colors to get light teal color shown.

    Tint one cup buttercream light pink and two cups buttercream light teal using color combinations provided.

    Reserve remaining icing white.

    Prepare decorating bag with tip 10 and light pink icing. Prepare decorating bag with tip 4B and light teal icing.

  5. Ice cake. Place cake on turntable. Ice cake smooth using white buttercream. Using stripe comb tool, comb sides of cake.

    Fill empty notches using light pink icing. Smooth with cake smoother. Smooth top of cake.

    Use hand to carefully cover entire sides of cake with white sparkling sanding sugar.

  6. Decorate cake. Carefully attach candy decorations around cake, approximately 10 in each row.

    Using light teal icing, pipe spiral border around top of cake.
