Chocolate Coffee Cookies

Made using instant coffee and cocoa powder for a deep chocolate flavor, these soft chocolate Christmas cookies are sure to become a seasonal favorite.

  1. Preheat the oven to 350°F. Prepare the cookie sheets with parchment paper.
  2. In a small bowl, stir the instant coffee into the melted butter until nearly dissolved.
  3. In a large bowl, stir together the flour, cocoa powder, baking soda and salt.
  4. In another large bowl, beat the bittersweet chocolate and butter mixture with an electric mixer on medium speed until well combined.
  5. Beat in the eggs, sugar and vanilla until well combined. Gradually add the flour mixture, scraping down bottom and sides of bowl as necessary, beating until flour is just combined.
  6. Using a tablespoon, scoop dough and drop onto the prepared cookie sheet, spacing 2 inches apart.
  7. Bake for 9-12 minutes, or until cookies crack on top.
  8. Remove from the oven and let cool on the pan for 5 minutes.
  9. Transfer the cookies from the cookie sheet to the cooling grid and let cool completely.
  10. Melt Candy. Melt Candy Melts Candy according to package instructions.
  11. Decorate Cookies. Gently dip cookies in melted Candy Melts Candy, shaking off excess, and place on parchment paper. Immediately sprinkle with sprinkles.
  12. Refrigerate until candy is set, about 10 minutes.
