Bright Neon Dragon Fruit Cake

  1. Bake cake. Prepare cake batter following recipe instructions. Bake and cool two cake layers. Level, fill and stack for 6 in. high cake.
  2. Tint buttercream. Tint 2 cups buttercream each neon green and bright pink using color combinations- Combine Kelly Green and Lemon Yellow icing colors to get neon green color shown. Combine Rose, Red-Red and a touch of Royal Blue icing colors to get bright pink color shown. Reserve remaining buttercream white.

    Ice sides of cake smooth using neon green buttercream. Ice top of cake smooth using remaining white buttercream.

  3. Melt candy. Download and print dragon fruit pattern. Place on cake board and cover with parchment or waxed paper.

    Melt Bright White, Bright Pink and Black Candy Melts candy, separately, according to package instructions.

    Prepare 3 decorating bags, separately, with melted candy. Cut 1/4 to 1/2 in. tip in pink and white bags and very fine (less than 1/4 in. tip) in black bag.

  4. Make candy dragon fruits. Following pattern, pipe white section of fruit first. While white candy is still wet, pipe black dots. Repeat for a total of 36 to 40 half slices and 36 to 40 quarter slices. Chill until set, about 5 to 10 minutes.

    Pipe pink rind on curved edge of all pieces. Chill until set, about 5 to 10 minutes.

  5. Decorate cake. Attach candy dragon fruits to cake using dab of remaining neon green icing (1 row of quarter slices along top edge, 2 rows of half slices in middle, 1 row of quarter slices along bottom edge). Rows should alternate directions. Prepare decorating bag with tip 1M and bright pink buttercream. Pipe swirl boarder on top of cake.
