

Easy Blackberry Cobbler

- Preheat oven to 375°F. Prepare a 9 in. x 9 in. pan with vegetable cooking spray.
- Prepare blackberry filling: In a large bowl, stir together granulated sugar, cornstarch, and cinnamon. Add the blackberries and lemon zest; gently toss until coated.
- Pour blackberry mixture into the prepared pan.
- Prepare topping. Stir together flour, brown sugar, baking powder and salt in a large bowl.
- Add butter into flour mixture. Using a pastry blender or 2 forks, cut butter into the flour mixture until it resembles coarse crumbles.
- Next, stir in milk and vanilla until a soft dough forms.
- Divide dough into 12 pieces and place each piece on top of blackberry mixture.
- Brush tops of dough pieces with milk and sprinkle with sparkling sugar.
- Bake cobbler for 42-47 minutes or until topping is golden brown and filling is bubbly and thickened. Serve warm.
