With Christmas right around the corner, prepare for the holiday season with these delicious almond snowball cookies! Just as their snowball name suggests, these almond-flavored cookies have a snowy white appearance and a melt in your mouth consistency. These little sugary cookies also go by Mexican wedding cookies and they’re very similar to Russian tea cakes. Perfect as a gift or as a quick Christmas treat, these holiday cookies are sure to be a hit.
Preheat the oven to 325°F. Prepare the cookie pans with parchment paper.
In a food processor, pulse almonds for 30-45 seconds or until coarsely ground. Do not over-process the almonds.
In a medium bowl, combine the ground almonds, flour and salt. Stir to combine.
In a large bowl, beat butter and sugar on a medium speed with an electric mixer for 2-3 minutes or until the mixture is light and fluffy. Add the vanilla and almond extracts, and continue to beat until combined.
Add the almond mixture to the butter mixture and beat on a low speed until the dough forms. Roll dough into 1 tablespoon-size balls and place 1 inch apart on the prepared pans.
Bake for 20-25 minutes or until the bottoms of the cookies are golden brown. Remove the pans from the oven on to the cooling grid and cool for 5 minutes. After 5 minutes, immediately roll the warm cookies in confectioners’ sugar and let them cool completely.
