1. - Preheat the oven to 325°F. Prepare the cookie pans with parchment paper.
2. - In a food processor, pulse almonds for 30-45 seconds or until coarsely ground. Do not over-process the almonds.
3. - In a medium bowl, combine the ground almonds, flour and salt. Stir to combine.
4. - In a large bowl, beat butter and sugar on a medium speed with an electric mixer for 2-3 minutes or until the mixture is light and fluffy. Add the vanilla and almond extracts, and continue to beat until combined.
5. - Add the almond mixture to the butter mixture and beat on a low speed until the dough forms. Roll dough into 1 tablespoon-size balls and place 1 inch apart on the prepared pans.
6. - Bake for 20-25 minutes or until the bottoms of the cookies are golden brown. Remove the pans from the oven on to the cooling grid and cool for 5 minutes. After 5 minutes, immediately roll the warm cookies in confectioners' sugar and let them cool completely.
