Roasted Brussel Sprouts and Sweet Potatoes with Bacon Recipe

The flavors of fall combine with these smoky-sweet oven roasted vegetables. It’s the perfect side dish for pairing with roast chicken, pork or barbecue. The roasted veggies are a breeze to make all an all-in-one sheet pan dinner.

  1. Preheat the oven to 450°F.
  2. In a small bowl, combine olive oil, balsamic vinegar, rosemary, paprika, garlic powder, salt and pepper. Set aside.
  3. Prep the vegetables by chopping the onion, sweet potato and brussel sprouts into bite sized pieces.
  4. Place the vegetables and bacon on a baking pan and drizzle with the olive oil mixture. Toss to coat evenly.
  5. Bake for 15 minutes, then reduce oven temperature to 425°F. Stir vegetables and bake 25 minutes longer or until vegetables are tender.
