This coconut frosting is easy to whip up whenever you want to add an extra boost of flavor. Made using coconut milk and extract, this coconut flavored frosting pairs well with everything from chocolate to vanilla cake. In a large bowl, beat shortening and butter with an electric mixer until smooth.
Gradually add sugar, 1 cup at a time, beating well after each addition. Scrape sides and bottom of the bowl after each cup of sugar is added. When all sugar has been mixed in, the frosting will appear dry.
Add coconut milk and coconut extract (if using); beat on medium speed until frosting is light and fluffy.
