Raspberry Fudge Cheesecake

There may be no dessert flavors better paired than chocolate and raspberry.

Ingredients

  • Crust

  • 1-1/2 cups chocolate wafers crumbs
  • 1/4 cups granulated sugar
  • 4 tablespoons (about 1/2 stick) butter, melted
  • Ganache

  • 1/2 cup heavy whipping cream
  • 4 ounces (about 1 bar) semi-sweet chocolate, chopped
  • Filling

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 3/4 cup sour cream
  • 4 eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon Imitation Almond Extract
  • 1 cup chopped raspberries (from 1 6-ounce package), plus additional for garnish (optional)
  • 1/2 cup raspberry preserves or seedless raspberry jam
