Cherry Candy Melts Cake

These cheery cherries make for a fun summery cake! Bright blue stripes and yellow accents set off the Candy Melts cherries for a cake fit for any celebration. You can make the cherries ahead of time and store them in a loosely covered container until you’re ready to decorate.

  1. Bake Cake. Prepare cake mix according to recipe instructions. Bake and cool two 6-inch cake layers. Trim cake layers to 2 ½ in. high. Level, fill and stack for 5 in. high cake. Let cool completely and crumb coat.
  2. Make the cherries. Place the cherry template underneath a sheet of parchment paper taped to a cake board. Melt candy according to package directions, thinning if needed with EZ Thin. Fill parchment triangle bags or disposable decorating bags and pipe leaves and stems with green Candy Melts candy, let set briefly, then pipe cherries using red Candy Melts. Before red fully sets, use a small amount of white to pipe highlight on side. Move template to pipe additional cherries – approximately 18 are used. Place in fridge until set, approximately 10 minutes.
  3. Tint Icing. Combine Sky Blue with a touch of Kelly Green to get blue color shown. Combine Buttercup and Lemon Yellow to get yellow color shown.

    Using color combinations provided, tint 3 cups of icing blue and 1 cup yellow. Reserve remaining icing white.

  4. Prepare bags. Prepare 1 bag with blue icing and 1 with white. Prepare 1 bag with tip 16 5 and yellow icing.
  5. Decorate cake. Snip tips from blue and white bags and pipe stripes around cake approximately 3/4 in. wide, starting with the blue. Smooth with icing smoother and clean top of cake with angled spatula.

    Ice top of cake white. Using yellow icing, pipe small swirls around top edge.

    Carefully attach cherries to the side of the cake with dots of icing if necessary.
