Caramel Apple Cookie Bars

Caramel and apples are a favorite fall combination! With this caramel apple cookie recipe you can make a delicious dessert that is sure to get you in the spirit of the season. Make these gooey caramel cookie bars for Thanksgiving and serve alongside a scoop of vanilla or cinnamon ice cream.

Ingredients

  • 2-1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 2 teaspoons ground cinnamon

  • 1 cup butter, softened

  • 1 1/2 cups granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cups chopped dried apples

  • 1/4 cup pecan chips

  • Topping

  • 1/4 cup caramel ice cream topping or sauce

  • Tools

  • 13 x 9 inch pan

  • Medium bowl

  1. Preheat the oven to 350°F and spray a 13 in. x 9 in. baking pan with vegetable pan spray.
  2. In a medium bowl, stir together flour, baking soda, baking powder, salt and cinnamon.
  3. In a large bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition, then add vanilla.
  5. Add flour mixture and mix until just combined. Stir in dried apples.
  6. Press mixture evenly into the prepared pan and top with pecan chips.
  7. Bake for 28-30 minutes or until a toothpick inserted in the center comes out almost clean. Remove to a wire rack and cool completely.
  8. Drizzle with caramel ice cream topping and serve.
