2-Tier Gladiola Cake

Create something simple and elegant for an upcoming celebration or shower with this 2-Tier Gladiola Cake. Featuring gladiolas made using royal icing, this cake is both delicate and beautiful.   1. One to two days in advance, make flowers. Prepare royal icing mix following recipe instructions. Following gladiola technique, make 3 gladiola flowers. Using Rose Bud technique, make 6 buds.

    Let dry on waxed paper, 24 to 48 hours.

  2. Bake cake. Prepare cake batter following recipe instructions. Bake and cool four 6 in. cake layers and four 8 in. cake layers.

    Level, fill and stack layers for two 8 in. high cakes. Prepare cakes for stacked construction.

  3. Ice cake. Prepare 16 in. decorating bag with tip 789 and white buttercream. Ice top of each cake first, smoothing with icing smoother or spatula as needed.

    Ice sides of cakes, then smooth, allowing icing to rise up over top edge.

    Insert dowel rods into 8 in. cake; stack 6 in. cake on top.

  4. Tint icing. Tint 1/3 cup icing dark green using color combination provided. Combine Kelly Green and Black icing colors for dark green color shown.

    Prepare decorating bag with coupler and dark green icing.

  5. Decorate cake. Attach tip 5 to dark green bag. Pipe stem and smaller branches on cake.

    Position flowers and buds on cake.

    Switch dark green bag to tip 67; pipe leaves on stem and around buds.
